Warm Potato Salad
- 4 large white potatoes, 1 inch dice
- 1/2 C shallot, minced
- 1 garlic clove, minced
- 1/4 C fennel fronds, roughly chopped
- 7 dashes smoked Tabasco sauce
- 1 tsp sriracha sauce
- 1-2 tsp prepared horseradish
- 1/2 C whole grain mustard
- 1/2 C mayonnaise
- Koasher salt
- Bring a large pot of water to the boil, season water with salt (water should be salty like the sea). Boil potatoes until a fork can easily pierce through them.
- Drain potatoes and immediately stir in remaining ingredients.
- Allow to rest a few minutes so acids can be absorbed by potatoes.
- Can be served hot, warm or room temperature.
